Under the direction of the Executive Chef, Executive Sous Chef, Sous
Chef or Supervisor, the Hotel - Kitchen Helper is responsible for maintaining
sanitary conditions within the food services department. Specifically, they
will be responsible for cleaning and sanitation of all dishware, pots, pans and
utensils that are used for food service production and consumption on a daily
basis. The Hotel - Kitchen Helper is also responsible for maintaining sanitary
working conditions including walls, floors, generalized and special cleaning of
kitchen equipment, and will adhere to all health and safety practices related
to food service operations. Speed and efficiency are required as well as the
ability to operate a variety of commercial electric dishwashing and sanitation
machines and washing large pots and pans by hands. Other job functions include
tasks such as sweeping, mopping floors and wiping down counters. This position
involves standing on their feet for the duration of their shift and must be
physically able to lift big and/or heavy items.
Please note, must be available for shift work (days, evenings, late night,
weekends, and holidays).
Responsibilities include:
• Reporting to the Executive Chef, Executive Sous Chef, Sous Chef or
Supervisor, the Kitchen Helper loads and operates the machine(s) required to
clean certain pots, pans, utensils and silverware. They must pre-wash dishes
and pre-scrub pots and pans as per prescribed procedures before putting them
through the mechanical dishwasher system. Once the dishes, pots and pans have
been cleaned, they make sure they have been properly stored and organized so
that other kitchen workers will have immediate access to them.
• Equipment: Kitchen Helpers are responsible for keeping the machine in clean
condition as well as cleaning out the drains and filters of the sinks and the
machines. They must monitor and ensure all chemicals required for cleaning and
sanitizing purposes are at the proper level required for the machine and are
properly stored in their appropriate place.
• Trash/Cleanup: The Kitchen Helper is required to take out the trash and make
sure it is secure inside of the dumpsters or garbage cans. They are required to
sweep floors, mop and make sure the dish-washing area is neat, organized and
clean. They ensure that no food scraps are left on the cabinets, sinks, tables
or dish-washing equipment and that all food areas are wiped down and sanitized.
• Working Conditions: Kitchen Helpers must be able to tolerate the heat when
the dish-washing machines are running and be able to stand harsh chemicals and
general cleaning solutions that help sanitize a kitchen area.
• Lifting: The Kitchen Helper should be in good physical condition that allows
them to bend, kneel or stoop, so they can pick up items such as loads of dishes
and other kitchen tools, machinery and food preparation equipment.
• The Kitchen Helper is required to develop and maintain positive workplace
relationships with all other Casino employees and customers whom they come in
contact with.
